Speculaas...

It is thought that the Dutch name Speculaas comes from the latin 'speculum' that means mirror.

 

Traditionally speculaas biscuits are the mirror image of the carved wooden moulds they are baked in.

 

Windmill shaped speculaas biscuits are known throughout the whole world, as are male or female speculaas figurines.

 

These days speculaas biscuits can take any shape or form. But you can do so much more with speculaas spice than just making biscuits.

Liz's speculaas spiced banana muffins

Makes approximately 12 medium-sized speculaas spiced banana muffins.

 

Ingredients

 

- 210g plain flour

- 100g castor sugar

- 3 teaspoons baking powder

- 10g (2 teaspoons) vandotsch speculaas spice mix

- 1/2 teaspoon table salt

- 120g (1/2 cup) multed butter

- 1 beaten egg

- 2 medium bananas peeled and cut into small squares

 

    : for added 'kick' consider adding one more teaspoon of vandotsch speculaas spice

 

Directions

 

- Preheat oven at 190C.

- Sift the dry ingredients together into a mixing bowl and add the sliced bananas.

- Blend the wet ingredients together and mix them with the dry ingredients until just moist.

-Divide the mixture and put them into individual muffin cases and bake for about 20 minutes in a preheated oven at 190C until the muffins are set and golden.

- Allow to cool or eat warm.
