It is thought that the Dutch name Speculaas comes from the latin 'speculum' that means mirror.


Traditionally speculaas biscuits are the mirror image of the carved wooden moulds they are baked in.


Windmill shaped speculaas biscuits are known throughout the whole world, as are male or female speculaas figurines.


These days speculaas biscuits can take any shape or form. But you can do so much more with speculaas spice than just making biscuits.

Ros' speculaas spiced pumpkin and apple crumble muffins

At the end of 2009, London-based Ros discovered a new passion in life - baking! Since she has been trying new recipes and perfecting old ones. Always looking for the next baking challenge, while recording her baking exploits at her blog called: The More Than Occasional Baker.


For her vandotsch speculaas spice infused pumpkin and apple crumble muffins Ros used up leftover pumpkin puree and the end of a bag of oats for the crumble. While the apples were also spare, sitting on the table.


Ros has decided to entering her vandotsch speculaas spiced pumpkin and apple crumble muffins to The No Waste Food Challenge which is run by Elizabeth from Elizabeth's Kitchen Diary. And I wish her best of luck!












What follows is an overview of the ingredients that Ros used to make the vandotsch speculaas spice infused pumpkin and apple crumble muffins, including:

Makes 12 medium sized speculaas spiced muffins.




For the muffins


- 225g plain flour

- 100g caster sugar

- 15g (3 teaspoons) vandotsch speculaas spice mix

- 60mls milk

- 60mls vegetable oil

- 2 eggs

- 2 apples, peeled, cored and chopped

- 285g pumpkin puree


For the crumble topping


-120g butter

- 120g brown sugar

- 80g flour

- 80g oats

- 5g (1 teaspoon) vandotsch speculaas spice mix
