It is thought that the Dutch name Speculaas comes from the latin 'speculum' that means mirror.
Traditionally speculaas biscuits are the mirror image of the carved wooden moulds they are baked in.
Windmill shaped speculaas biscuits are known throughout the whole world, as are male or female speculaas figurines.
These days speculaas biscuits can take any shape or form. But you can do so much more with speculaas spice than just making biscuits.

Self-confessed addicts to cookery books, sisters Aideen and Sharon, are the founders of the Vanilla Bake Club: a group of informal bakers located across the UK and Ireland that come together regularly, initially in Antrim and Upminster, but now also in several other towns.
The Vanilla Bake Club blog is an informal and chatty account of Aideen and Sharon's foodie obsessed lives, sharing their recipes and any tips they have learned along the way while chatting about the live events and the fantastic people that make these events the success they are. A great initiative!
