It is thought that the Dutch name Speculaas comes from the latin 'speculum' that means mirror.

 

Traditionally speculaas biscuits are the mirror image of the carved wooden moulds they are baked in.

 

Windmill shaped speculaas biscuits are known throughout the whole world, as are male or female speculaas figurines.

 

These days speculaas biscuits can take any shape or form. But you can do so much more with speculaas spice than just making biscuits.

Self-confessed addicts to cookery books, sisters Aideen and Sharon, are the founders of the Vanilla Bake Club: a group of informal bakers located across the UK and Ireland that come together regularly, initially in Antrim and Upminster, but now also in several other towns.

What follows is an overview of the ingredients that Sharon used to make the vandotsch speculaas spiced chocolate biscuits, including:

 

Makes approximately 35 large biscuits or 50/60 smaller ones but the recipe can be halved.

 

Ingredients for the biscuits:

 

- 450g self-raising flour

- 250g chilled cubed butter

- 100g soft brown sugar

- 100g dark brown sugar

- 200g golden syrup

- 10g (2 teaspoons) bicarbonate of soda

- 30g (2 tablespoons) vandotsch speculaas spice mix

 

Ingredients for the chocolate:

 

- 250g dark chocolate minimum 55% cocoa solids

- 5 g (1 teaspoon) vandotsch speculaas spice mix
